Carrot Slaw with Creamy Peanut Sauce

Ingredients

1 -2 bag, carrots, grated

½ red cabbage, medium size, grated

3 scallions, chopped

1 cup, peanut butter

1 ½ tbsp, honey

½ cup, Tamari sauce

¼  cup of water, more to thin if needed

2 garlic cloves, finely minced

1 tbsp, ginger, grated

1 dash, toasted sesame oil

Directions

Use a hand grater or (better yet!) food processer to grate the carrots and cabbage. Mix carrots, red cabbage and scallions in a large bowl. 

Whisk together the peanut butter, honey, Tamari sauce, water, garlic, ginger, and toasted sesame oil until combined. If sauce is too think, add in a bit of water until sauce reaches desired consistency. 

Pour ½ of sauce over salad. Stir to combine. Continue to add sauce until salad appears evenly coated. Can be served immediately or refrigerated. If refrigerating, stir in a little reserved sauce prior to serving.
