Autumn Bliss Salad

Ingredients

1 tablespoon oil

1 teaspoon cumin

Pinch of cayenne

1 sweet potato, peeled and cubed

4.5 oz. salad mix

½ cup pumpkin seeds

½ cup Parmesan Reggiano, grated

1 lemon

2 tablespoons olive oil

Salt and pepper

Directions

Preheat oven to 350 degrees.

In a medium bowl, combine oil, cumin, and cayenne. Add sweet potato and toss to coat. 

Spread sweet potatoes on a rimmed baking sheet and bake for 15 minutes.  Remove form oven and stir, then cook for 10 minutes more.  Remove from oven and cool.

In a large bowl combine olive oil and the juice squeezed from one lemon plus salt and pepper, to taste.

Add salad greens and toss to coat.

Put dressed greens on a serving plate, then add sweet potatoes, pumpkin seeds, and Parmesan cheese.
