Fiesta Hashbrown Casserole

Makes 6 servings

Ingredients

6 cups of Cascadian Farms spud puppies

1 tbsp of olive oil

1 medium onion, diced

1 green pepper, diced

2 anaheim peppers, diced (optional)

2 jalapeno peppers, diced (optional)
1 lb of grass-fed ground beef

1 package of taco seasoning

1 teaspoon of salt

½ teaspoon of pepper

I can of Field Day black beans

1 can of Field Day corn

1 cup of shredded cheddar

1 cup of shredded mozzarella

Optional garnish – sour cream. avocados, grapes tomatoes, jalapenos, green onions, salsa.

Directions

Preheat oven to 425. Spread out spud puppies on a large sheet pan. Bake for 30 minutes, or until crispy. 

In a large fry pan, add the olive oil and saute the onions and peppers for 2 minutes or until softened. Add salt and pepper. Remove and set aside. 

In same fry pan, add grass fed ground beef and cook until no longer pink. Add back in the peppers and onion mix and the taco seasoning. Stir until combined. 

When potatoes are done, assemble the casserole in this follow order: potatoes, black beans, corn, and cheese. Bake for an additional 10 minutes – or until cheese is melted.

Garnish with sour cream, avocados, grape tomatoes, jalapenos, green onions, salsa.
