Greek Tortellini Salad

Ingredients

8 oz. Rising Moon Cheese Tortellini, cooked according to package directions and immediately cooled in an ice bath.

1 bunch asparagus, woody stems snapped off, cut into 2” pieces, then blanched

1 hothouse tomato, diced

¼ cup red onion, minced

¼ cup Kalamata olives, pitted and chopped

¼ cup feta cheese

1 recipe Greek Dressing (below)

Directions

Combine all ingredients and stir until evenly coated.

Greek Dressing

Ingredients

¼ cup olive oil

2 tablespoons red wine vinegar

1 tablespoon lemon juice

½ teaspoon Dijon mustard

1 clove garlic, minced

1 teaspoon dried oregano

½ teaspoon Kosher salt

Black pepper, to taste

Directions

Whisk ingredient together.
