Cantaloupe Basil Granita

Ingredients

1 large cantaloupe

1/3 cup of sweet wine

¼ cup of sugar

2 tbsp chopped basil

Pinch of salt and pepper

Directions

Blend chopped cantaloupe, sweet wine, sugar, basil and salt. Blend until pureéd. Pour into a 13 x 9 baking sheet and freeze until mixture forms into a firm slush. Can be stored for a couple of days – just cover with saran wrap.

Serve in a glass with a fresh basil leaf and some freshly ground pepper.
