Summer Corn Salad

Ingredients

6 ears corn

½ cup red onion, finely minced

1/3 cup fresh lemon juice

¼ teaspoon sea salt

2 Tablespoons brown sugar

3 Tablespoons Sunflower Oil (we love Driftless Organics)

1 cup roasted, salted sunflower seeds

1 Tablespoon fresh oregano, finely chopped


Directions

Shuck corn and cut kernels from the cob. Put in medium bowl and add onion. Set aside.

In a small bowl or jar mix lemon juice, salt, and brown sugar. Stir until sugar is mostly dissolved. Slowly add sunflower oil, stirring with a whisk to incorporate.

Pour dressing over corn salad, let sit for at least 15 minutes.

Stir in sunflower seeds just before serving. Garnish with fresh oregano.
