Sweet & Smoky Baked Beans

Makes 4-6 servings

Ingredients

4 strips of bacon, diced

1/2 Vidalia onion, diced

1 jalapeno, diced (more if you want extra HEAT!)

2 cans of pinto beans (15 oz)

1 can of northern beans (15 oz)

3/4 cup of ketchup

4 tbsp, molasses

2 tsp, ground mustard

1 tbsp, paprika

2 tbsp, brown sugar

3 tsp, apple cider vinegar

salt and pepper to taste

Directions

In a large Dutch Oven, cook bacon on medium heat for about 3-4 minutes. Add in onion, and jalapeño and cook an additional 2-3 minutes. Add in beans and gently stir to combine. Add in ketchup, molasses, ground mustard, paprika, brown sugar, and apple cider vinegar. Stir to combine. Add in salt and pepper and simmer beans on stove for 20 minutes. Stir occasionally to prevent sticking. For best results and flavor, refrigerated overnight. Serve with fresh slices of jalapeños.
