Turkey Chili

Ingredients

1 tablespoon olive oil

1 # Ferndale ground turkey

1 yellow onion, diced

2 tablespoons chili powder

2 teaspoons oregano

1 teaspoon cumin

1 can green chilis with juice

1 can (28 oz.) diced tomatoes with juice

2 cans (15.5 oz.) pinto beans, drained and rinsed

1 cup chicken broth

Salt and pepper to taste

Directions

In a Dutch oven, break ground turkey into bite-sized pieces and cook over medium high heat until browned on the outside and cooked through, stirring occasionally.

Add in onion and stir scraping the bits off the bottom. Cook until onion is translucent.

Then add in spices and cook for 2 minutes more, stirring constantly.

Add in green chilis, tomatoes, beans, and broth. Season with salt and pepper.

Stir, turn up heat to high and bring to a boil, stirring occasionally.

Reduce heat and cover, simmer for 20 minutes, continuing to stir.

Taste periodically and adjust seasonings to taste.
