Chocolate Zucchini Cake

Ingredients

½ cup butter

1 ½ cup sugar

½ cup cooking oil

2 eggs

1 teaspoon vanilla

½ cup buttermilk

½ teaspoon cinnamon

½ teaspoon cloves

2 ½ cups all-purpose flour

¼ cup cocoa

1 teaspoon baking powder

1 teaspoon baking soda

2 cups finely grated zucchini (2 medium zucchini)

1 cup chocolate chips

1 cup pecans, rough chopped

Directions

Preheat oven to 325 degrees. Cream butter and sugar. Add oil, eggs, vanilla, and buttermilk and beat well.

In a separate bowl combine cinnamon, cloves, flour, cocoa, baking powder, and baking soda. Whisk together to combine. Slowly add to wet mixture in 3 parts, stirring in between each addition. Add zucchini and mix well. Pour into a greased 9 x 13 pan. Top with chocolate chips and pecans.

Bake for 45 minutes or until a toothpick inserted into the center comes out clean.
