Asian Beef and Vegetable Bowl
Ingredients
1 cup cooked rice
1 lb. Grass Fed Ground Beef
2 tablespoons sesame oil
2 large cloves garlic
½ teaspoon fresh ginger, minced
2 carrots, peeled and chopped
2 ribs celery, chopped
1 small, sweet onion, sliced
8 oz. Cremini mushrooms, sliced
2 green onions, chopped
½ cup tamari or low sodium soy sauce
2 tablespoons brown sugar
¼ teaspoon red chilis
sprinkle of Gomasio (sesame seeds and sea salt)
Directions
Brown ground beef in a skillet, until fully cooked, then remove from skillet and drain excess fat.
Add sesame oil to the skillet and heat over medium high heat. Add garlic, ginger, and sweet onions and sweat over medium low heat until onions become translucent – do not burn or brown.
Next add celery, carrots, mushrooms, and the white part of the green onions. Sauté for 5 to 10 minutes, stirring occasionally until vegetables are crisp tender.
Stir in tamari, brown sugar, and red chilis and cook 5 more minutes until sauce just begins to boil. Add in ground beef and cook 5 minutes more.
Serve over rice and garnish with the green part of the green onions and sesame seeds.
