Stone Fruit Salad with Spiced Almonds
This refreshing salad is a great way to enjoy a variety of stone fruits. You will have extra spiced almonds; they make a great snack.
Ingredients
Spiced Slivered Almonds
1 cup slivered almonds
1 tablespoon olive oil
½ teaspoon cumin
½ teaspoon Kosher salt
¼ teaspoon garlic powder
Pinch of cayenne
Directions
Heat a cast iron pan and pour the toasted almonds in a single layer on the bottom. Toast stirring frequently for 3 to 5 minutes or until the almonds become fragrant and slightly browned. Remove from pan and set aside.
Remove the same pan from the heat for a few minutes to cool slightly.
Return pan to medium heat.
Add olive oil and spices stirring constantly for 1 minute or until spices are incorporated with the oil.
Return the slivered almonds to the pan and stir over the heat for 1 to 2 more minutes and until almonds are well coated.
Remove from the pan and let cool before serving.
Avocado Lime Dressing
2 tablespoons avocado oil
2 tablespoons lime juice
1 teaspoon honey
1 tablespoon shallot, minced
2 tablespoons fresh cilantro, minced
Salt to taste
Combine ingredients in a bowl. Whisk together until incorporated.
Stone Fruit Salad with Spiced Almonds
Serves 2
5 oz. mixed greens washed and dried ¼ cup Avocado Lime Dressing (recipe above)
1 peach, pitted and sliced
1 plum, pitted and sliced
6 cherries, pitted and halved
¼ cup feta cheese
1 red onion ring, thinly sliced and separated
¼ cup Spiced Almonds (recipe above)
In a bowl, toss greens with dressing until evenly coated.
Divide greens on two plates.
Add the rest of the ingredients, evenly divided.
