Greek Pasta Salad
Ingredients
3 cups of dried pasta
1 English cucumber
2.5 cups of grape tomatoes, halved
½ cup red onions, thinly sliced
1 ½ cups of black olives, sliced
1 1/2 cup of crumbled feta
Assortment of fresh herbs – parsley, oregano, and basil
Dressing:
½ cup olive oil
Freshly squeezed lemon juice, half a lemon
1 tsp honey
2 tbsp red wine vinegar
2 tsp fresh oregano
2 tsp fresh basil
Salt to taste
Directions
Cook pasta according to package. Prepare the dressing by placing the oil, red wine vinegar, lemon juice, oregano, parsley, basil, honey and salt in a small mason jar. Shake until mixed, and set aside.
Once pasta has cooled, add the chopped cucumbers, tomatoes, black olives and herbs. Add dressing and mix all together. Add feta and mix gently to combine. Chill before serving.
