Baking Powder Biscuits

Adapted from the,” Joy of Cooking” – Basic Rolled Biscuits

Ingredients

Makes Four -3 ½” biscuits plus extra dough

2 cups AP flour

2 ½ teaspoons baking powder

½ teaspoons salt

5 tablespoons butter, cold and sliced in small pieces, plus 1 tablespoon, melted

¾ cups cold milk

Directions

Preheat oven to 450 degrees.  Using the butter wrapper, grease an 8 x 8 square pan and set aside.

In a medium bowl whisk together flour, baking powder, and salt.

Cut in cold butter using a pastry blender or two forks.  Until butter is pea sized and coated with flour. 

Add cold milk and combine with a rubber scraper until flour mixture is moistened.

Fold dough over itself several times kneading in stray bits of flour.

Turn dough ball out on a floured surface.

Gently roll out dough with a floured rolling pin until it is ¼” thick.

Using a 3 ½ “biscuit cutter or glass – cut out biscuits and place in prepared pan leaving only a little space in between biscuits.

Brush biscuit tops with butter.

Bake for 10 to 12 minutes or until biscuits are golden brown.

Reform remaining dough into a ball to make Mini Cinnis or an additional biscuit.
