Denver Egg Bake
Ingredients
This is a great make ahead breakfast for busy mornings. We use a mixture of different bread ends that we keep in the freezer- a variety of breads adds great texture and flavor. If you are using fresh bread, cut into cubes, and put on a baking sheet- dry in a 200-degree oven for 20 minutes
6 cups bread, cubed
2 cups cubed smoked ham (we like Beeler’s)
1 small onion, diced
1 green pepper, diced
1 tablespoon butter
6 eggs
2 cups milk
½ teaspoon dry mustard
1/8 teaspoon cayenne pepper
Salt and pepper
2 cups cubed cheddar cheese
Directions
In a 9 x 13 casserole dish, layer bread cubes.
Melt butter in a skillet on the stove. Add in ham and onions and sauté until onions are soft. Ad din green pepper and cook 2 minutes more.
Layer ham mixture on top of bread.
In a medium bowl combine eggs, milk, mustard, cayenne, salt, and pepper.
Stir with a whisk until well mixed.
Pour over bread and ham.
Top with cubed cheese.
Cover, and refrigerate overnight.
Preheat oven to 350 degrees.
Bake uncovered, 45 minutes or until eggs are set.
