Biscuits and Gravy
Baking Powder Biscuits
Preheat oven to 450 degrees.
2 cups AP flour
2 ½ teaspoons baking powder
½ teaspoon salt
Whisk above ingredients together.
Then add:
6 Tablespoons cold butter cut into small pieces
Using two forks, quickly cut in butter until the mixtures resembles small breadcrumbs.
Then add:
¾ cup milk
Mix with rubber spatula until flour is moistened and just blended. Do not over mix.
Gather the dough not a ball and turn out onto a lightly floured surface. Gently knead four or five times and then roll out the dough to ½ “thick.
Cut biscuits with a biscuit cutter or a glass.
Place one inch apart on a baking sheet.
Melt 1 Tablespoons butter.
Bruch melted butter on the top of the biscuits.
Bake for 10 to 12 minutes or until golden on top.
Sausage Gravy
1 lb. loose breakfast sausage
¼ cup flour
2 ½ cups milk
Salt and pepper to taste
Fresh sage for garnish
In a skillet, cook sausage until browned on the outside and no longer pink in the middle. Remove from skillet and set aside.
Over low heat stir flour into the sausage drippings creating a roux. Gradually add milk; cook until mixture comes to a boil and thickens, stirring constantly. Add sausage back in, reduce heat to medium-low; simmer 2 minutes, stirring constantly. Season to taste with salt and pepper. Garnish with a couple of leaves of fresh chopped sage.
