Cherry Chutney
Ingredients
2 tsp, olive oil
2 tbsp, shallots
2 cups, cherries, pitted
1/3 cup, local honey
3 tbsps, apple cider vinegar
1/2 lime, juiced
1/4 tsp, allspice
1/4 tsp, red pepper, options.
Directions
In a medium saucepan, heat oil on medium high. Add shallots and cook 2-3 minutes until fragrant and translucent.
Add cherries, honey, apple cider vinegar, and lime. Stir to combine. Add in all spice and red pepper. Cook on medium for about 20 minutes - or until sauce has thickened.
