Cherry Chutney

Ingredients

2 tsp, olive oil

2 tbsp, shallots

2 cups, cherries, pitted

1/3 cup, local honey

3 tbsps, apple cider vinegar

1/2 lime, juiced

1/4 tsp, allspice

1/4 tsp, red pepper, options.

Directions

  1. In a medium saucepan, heat oil on medium high. Add shallots and cook 2-3 minutes until fragrant and translucent.

  2. Add cherries, honey, apple cider vinegar, and lime. Stir to combine. Add in all spice and red pepper. Cook on medium for about 20 minutes - or until sauce has thickened.
