Dilly Chickpea Salad

Ingredients

2 cans (15.5 oz), chickpeas, drained

3/4 cup, celery, diced

1/4 cup, red onion, diced

1/4 cup, local dill, chopped

1/4 cup, Greek yogurt

1/3 cup, mayo

1/2 tbsp, horseradish

1 tbsp, dijon mustard

1 1/2 tbsp freshly squeezed lemon juice

salt and pepper to taste

Directions

  1. In a small bowl, combine the yogurt, mayo, horseradish, mustard, lemon and dill. Sit to combine. Add salt and pepper to taste.

  2. In a large bowl, combine chickpeas, celery and red onion. Stir to combine.

  3. Pour dressing/sauce over the chickpea/celery/red onion mixture. Stir until salad dressing has been evenly distributed.

  4. Chill for at least an hour.
