Skillet Sweet Corn
Serves 2
Ingredients
1 tablespoon butter
1 shallot, minced
3 cobs fresh sweet corn, kernels removed
5 mini sweet peppers, diced
1 jalapeno pepper, ribs and seeds removed, then diced
1 teaspoon cumin
1 teaspoon lime juice
2 tablespoons fresh cilantro, chopped
2 tablespoons feta cheese
Directions
Melt butter in a skillet over medium-high heat. Add shallot and cook one minute, stirring frequently.
Next add sweet corn kernels and peppers. Sprinkle with cumin, then cook, stirring occasionally, for 8 to 10 minutes or until corn softens slightly and begins to brown.
Remove from heat and immediately stir in lime juice, cilantro, and feta. Serve hot or cold.
