Egg Cups

Makes 12

Egg Mix Ingredients

6 eggs

½ cup milk

¼ teaspoon salt

¼ teaspoon pepper

Ham and Cheese Cup Ingredients

3 slices deli ham, chopped into small pieces

¼ cup cheddar cheese, shredded

Spinach and Feta Cup Ingredients

1 tablespoon butter

½ yellow onion, diced

4 mushrooms, sliced

3 cups fresh spinach, rough chopped

¼ cup feta cheese

Egg Cup Directions

Mix eggs, milk, salt and pepper with a whisk until well blended, set aside.

Line muffin pan with cupcake liners.

Divide ham and cheddar cheese between six cups.

Sauté onion in butter until translucent. Add mushrooms and cook until they begin to turn golden.

Add spinach and cook until spinach wilts and reduces.

Fill remaining 6 cups with spinach mix.

Top with feta cheese.

Gently pour egg mix over the top of the ingredients.

Bake for 18 to 20 minutes or until eggs are set.
