Sweet Rhubarb Dutch Baby Pancake

Sweet Dutch Baby Pancake Ingredients

2 tbsp butter

8 eggs

1 cup whole milk

1 ½ tsp vanilla

3 tbsp sugar

1 ¼ cup flour

1 tsp cinnamon

½ tsp nutmeg

½ tsp salt

Preheated oven to 425 degrees. Add butter to cast iron skillet and place in oven.

In a medium bowl, combined the flour, sugar, cinnamon, nutmeg, and salt. 

In a large bowl, whisk eggs, milk, and vanilla. Add dry ingredients to whisked mixture. Stir to combine. 

Remove cast iron skillet from oven and pour in mixture. Bake for 20 minutes.

Serve with Rhubarb sauce and powdered sugar.

Rhubarb Sauce Ingredients

¼ cup water

3 cups of rhubarb, chopped into ½ inch pieces

½ cup sugar

1 tsp cinnamon

1 tsp vanilla

3 tbsp brown sugar

In a medium saucepan on medium heat, add water, rhubarb, sugars, and cinnamon. Cook for about 10 minutes or until a thick sauce forms. Add in vanilla and cook an additional minute. Remove from heat.
