Easy Weeknight Spaghetti

Ingredients

1 # Co-op’s Own™ Pork Sausage

12 oz spaghetti noodles, cooked according to package directions

1 tablespoon olive oil

1 sweet onion, sliced

8 oz white button or Cremini mushrooms, sliced

1 teaspoon Italian seasoning

¼ teaspoon, red chili peppers

4 cups baby spinach, rough chopped

1 ½ cups Muir Glen roasted garlic pasta sauce

Parmesan cheese

Directions

In a skillet, cook sausage until browned and cooked through.  Remove from pan and drain on a paper towel.  Remove grease from pan.

Heat 1 tablespoon olive oil in the skillet, then add onion and mushrooms.  Cook over medium heat stirring occasionally until onions are translucent 3 to 4 minutes.  Add seasonings and stir.  Then add spinach.  Cook for 1 to 2 minutes, stirring occasionally until spinach wilts.

Add sausage back to the pan.  Add pasta sauce and stir.  Simmer over low heat for 8 to 10 minutes until heated through.

Serve immediately over spaghetti noodles, topped with shredded Parmesan cheese.
