Cauli-Jale Corn Fritter
2 cups of chopped cauliflower
2 eggs, beaten
¼ cup, pickled jalapenos
¾ cup, cornmeal
2 tbsp, milk
¼ cup, Colby cheese
2 tbsp butter
Directions
In a medium bowl, combine cauliflower, eggs and jalapenos. Stir until combined.
Add in cornmeal and milk to bowl. Stir to combined. Add in cheese and gently stir.
In a large skillet, melt butter on medium. Using clean hands, grab about 1/4 cup of mixture and press into a patty about ½ inch thick. Cook on each side until crisp, about 3-4 minutes per side.
Recipe makes about 5-6 fritters.
