Three Pepper Pasta Salad

Ingredients

3 cups of pasta

1 small red onion, diced

1 green pepper, diced

1 red pepper, diced

1 yellow pepper, diced

1 medium tomato, diced

1 can of olives, halved

½ cup of feta cheese

Salt and pepper


For the dressing

½ cup of olive oil

¼ cup of red wine vinegar

1 tbsp of honey

1 tbsp of Dijon mustard

1 tsp of basil

1 tsp parsley

1 tsp oregano

Salt and pepper

Directions

Boil pasta until al dente. Let cool. Dice red onion, peppers, tomatoes, and olives. Make dressing. Once pasta is cool, combine with the onion, peppers, tomatoes, and olives. Stir until mixed.

Add dressing and stir until combined. For best flavor, refrigerate for an hour. Before serving, sprinkle with feta.
