Egg Muffins

Makes a dozen

Ingredients

12 eggs

¾ cup, milk

1 cup of hashbrowns

1/3 cup of cheese (Cheddar, Colby, Pepperjack)

½ cup of your choice of meat (ham, bacon, sausage, etc.)

¼ cup of red onion, diced

¼ cup of green peppers, diced

Salt and pepper

 

 Directions

Preheat oven to 350. Whisk the eggs, milk, salt and pepper. Grease a 12 cup muffin tin. Evenly divide hashbrowns, ham, onions, green peppers, and cheese among the 12 cups. Pour in egg till cup is about three quarters full. Bake for about 20-25 minutes.
