Grinder Bean Salad 

Ingredients

1 - 15 oz can of Chickpeas, rinsed & drained  
1 - 15 oz can of Navy or White Beans, rinsed & drained  
1 large red bell pepper, chopped 
½ cup of pepperoncini peppers, choppers
1 red onion, chopped  
4 Persian cucumbers, diced  
1 bunch of basil, cut into fine strips  
1 package of salami, or cured meat of your choice, cut into thin strips 
½ cup of sharp cheddar cheese, or feta cheese, cubed  

Dressing Ingredients

½ cup extra virgin olive oil  
½ cup red wine vinegar  
3 tbsps pepperoncini juice  
1 tbsp of minced garlic 
1 tsp red pepper flakes  
Salt and pepper to taste  

Directions

Combine all dressing ingredients in a mason jar, shake to mix well.  

Combine all salad ingredients in a large bowl, mix gently to combine.  

Pour dressing over the salad, mix well to combine.

Allow to marinate in the refrigerator for two hours before serving.
