Spicy Sesame Cucumber Salad  

Ingredients

1 pack of Persian Cucumbers, cut into 1-inch pieces
3 tbsps of unsalted peanut butter  
2 tbsps of Soy Sauce or Coconut Aminos  
2 tbsps of Rice Wine Vinegar  
1 tsp of Sesame Oil  
Chili crisp to your preferred spice level  
1 tbsp of Maple Syrup or preferred sweetener  
¼ cup of green onions, chopped  
Chopped Peanuts for topping  

Directions

Cut cucumbers into 1-inch irregular pieces and toss with 1 tsp of salt. Allow cucumbers to drain excess liquid. Set it aside. Julienne the green onions, and finely mince garlic.  

In a separate bowl combine peanut butter, rice wine vinegar, soy sauce, maple syrup, sesame oil. Mix to combine; if the sauce is too thick add one tablespoon of water to loosen.  

Drain and rinse cucumbers and pat dry. Pour sauce over cucumbers and toss to combine. Top with chopped peanuts and chili oil to taste.
