Italian Sausage, White Bean, and Kale Soup
Ingredients
1 lb Co-op’s Own™ Italian Sausage
2 tbsp, olive oil
1 medium yellow onion, chopped
5 carrots, chopped
4 stalks celery, choped
3 garlic cloves, minced
6 cups of chicken broth
1 bay leaf
½ rind of Parmesan, optional
1 can (15 oz) Field Day Cannellini Beans
4 leaves of kale, chopped
Directions
In a Dutch oven, sauté Italian sausage until cooked. Remove from pot and place to the side.
On medium heat, add the olive oil to the pot. Add onion, carrots, and celery to the pot. Cook about 5 minutes, until vegetables are starting to soften. Add in garlic and cook an additional minute.
Add chicken broth, bay leaf, and Parmesan rind to the pot. Bring to a light simmer, cover, and cook an additional 10 minutes.
Add in beans, Italian sausage and kale. Cook an additional 5 minutes.
Serve with a piece of crusty bread.
