Gluten-Free Pumpkin Pancakes
Ingredients
1 1/2 cups gluten free flour
1/2 tsp baking soda
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp salt
1 1/2 cups oat milk
1 egg
1 1/2 tbsp coconut oil
1 tsp vanilla extract
1/3 cup brown sugar
3/4 cup pumpkin purée
1/2 cup of yogurt
Directions
In a small bowl, combine dry ingredients: flour, baking soda, cinnamon, nutmeg and salt. Set aside.
In a large bowl, whisk together the egg and milk. Add in coconut oil, vanilla, and sugar. Whisk until combined. Add in yogurt and pumpkin and whisk until combined (There will be a few lumps).
Gently fold the dry ingredients into the wet ingredients (again, there will be a few lumps).
Grease a large pan or skillet and cook pancakes. Grease and repeat.
Serve with toasted walnuts, maple syrup, and a little powdered sugar.
