Mediterranean Melt

Ingredients

2 slices sourdough bread

Butter

1 tablespoon prepared hummus

2 tablespoons feta cheese

1 small zucchini cut into thin strips lengthwise

2 thin slices red onion

2 mini peppers cut into rounds

3 cherry tomatoes cut into slices

Olive oil

Directions

Place olive oil in the bottom of a skillet and heat to medium hot. Place vegetables in a single layer on the bottom of the pan. Cook for two to three minutes then flip and cook the other side for 1 to 2 minutes more. Vegetables should be lightly browned. 

Meanwhile, butter one side of each slice of bread. Lay open faced with the butter side down on a medium hot pan. Spread one slice with a thin layer of hummus. Sprinkle the other slice with feta cheese. Layer vegetables on top of the hummus. Fold the feta piece over on the hummus piece and cook until both sides are golden brown.
