Gyros with Tzatziki Sauce
Grilled Gyro Meat Kabobs
Serves 4
Ingredients
1 # beef, lamb, or chicken, cut into 1” chunks
3 tablespoons gyro spice blend (recipe below)
2 cloves garlic, chopped
3 tablespoons lemon juice
2 teaspoons white wine vinegar
2 tablespoons extra virgin olive oil
2 tablespoons plain Greek yogurt
Directions
Combine spices, garlic, lemon juice, vinegar, olive oil, and yogurt. Stir until well blended. Add meat making sure every piece is coated. Cover and refrigerate for at least one hour.
Remove meat from refrigerator and place on skewers.
Cook on oiled grill at medium-high heat. Rotate frequently until meat is fully cooked.
Serve in a flatbread topped with Tzatziki sauce, chopped fresh tomatoes, and chopped onions.
Gyro Spice Blend
1 tablespoon paprika
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon cumin
1 tablespoon coriander
1 tablespoon rosemary
1 tablespoon oregano
1 tablespoon marjoram
1 teaspoon cinnamon
Measure all ingredients into a small bowl. Stir to combine.
Tzatziki Sauce
Ingredients
1 medium cucumber, peeled, seeded, and cut into small cubes
Salt and pepper
1 ½ cups plain Greek yogurt
2 cloves garlic, minced
3 tablespoons lemon juice
2 to 3 tablespoons fresh mint, chopped
¼ cup extra virgin olive oil
Directions
Place cucumber chunks in a small bowl and sprinkle with salt and pepper. Set aside for 10 minutes.
Meanwhile, in another bowl mix yogurt, garlic, lemon juice, and mint until well combined. Stream in olive oil stirring constantly with a wire whisk.
Turn cucumbers out onto a tea towel and gently press the excess moisture out.
Stir cucumbers into the sauce and chill for at least 15 minutes before serving.
To make gyros
Layer gyro meat on a pita or flatbread. Top with Tzatziki sauce and then with fresh cut sweet onions and diced tomatoes. Serve immediately.
