Pistachio Asparagus Salad

Ingredients

1 tablespoon olive oil

1 bunch asparagus, woody ends trimmed off and spears cut into thirds

1 cup shelled pistachios

Juice of 1 lemon

2 cloves garlic

¼ cup avocado oil

 2 tablespoons honey

Salt and pepper

4 oz Superior Fresh Spring Mix

Salt and pepper

Parmesan Reggiano Cheese, shredded

Directions

Pre heat oven to 375 degrees.

Pour olive oil on a baking sheet, add asparagus and pistachios, and roll around to coat. Bake for 7 to 10 minutes (depending on the thickness of the asparagus.  Until asparagus is crisp tender (do not overcook).  Remove from oven and cool.

In a jar or bowl mix lemon, garlic, avocado oil, honey, salt, and pepper until well blended. Pour over asparagus and toss to coat.

Arrange salad mix on plates.  Add asparagus and pistachios.

Grate Parmesan Reggiano over the top.
