Whipped Ricotta with Blueberries and Melon

Ingredients

½ cup whole milk ricotta

1 tablespoon whipping cream

2 teaspoons honey

1 teaspoon fresh lemon zest

1 cup fresh blueberries

4 slices ripe melon, peeled and cubed

A few mint leaves, thinly sliced

Directions

Using a hand mixer, whip together ricotta, heavy cream, honey, and lemon zest until smooth and creamy.

Divide fruit into two bowls.

Divide ricotta and dollop on top of the fruit.

Garnish with mint.
