Grilled Salmon with Pesto

Ingredients

2 salmon fillets

1 tablespoon olive oil

Salt and pepper to taste

1/4 cup pesto

Lemon slices

Directions

Heat grill to medium hot.

Brush salmon fillets with olive oil, then season with salt and pepper.

Place salmon on grill, skin side up (if you are leaving the skin on), cover and cook for 5 minutes.

Flip the salmon and spread pesto on top of the fillet.

Grill for 5 more minutes or until salmon flakes apart with a fork and reaches 125 to 130 degrees in the center.

Remove from grill and serve with lemon wedges.
