Persimmon & Beet Salad with Maple Dijon Dressing

Ingredients

Maple Dijon dressing (recipe below)

1 bunch of lacinato kale

1/4 cup of red onion, thinly sliced

1 persimmon, cut into 1/2 inch pieces

1/2 large or one whole small red beet, cut into 1/2 inch pieces

1/4 cup of feta, crumbled

1/4 cup of walnuts, chopped

Directions

In a medium bowl, combine the kale and onions. 

Divide kale and onion mixture between two plates. Add chopped persimmons, red beets, feta and walnuts.

Pour dressing over salad.

Maple Dijon Dressing Recipe

Ingredients

2 tbsp dijon mustard

1 tsp apple cider vinegar

1 tsp maple syrup

1/3 cup of olive oil

salt and pepper to taste

Directions
 
In a small bowl, combine Dijon mustard, 1 tsp apple cider vinegar, and maple syrup. Whisk until combined. Add in oil and whisk until combined.
