Sweet Potatoes with Honey Goat Cheese and Toasted Walnuts

makes 4-6 servings

Ingredients

4 large sweet potatoes

1-2 tbsp olive oil

1/4 cup Organic Valley heavy whipping cream

2 oz, LeClare Family Farms Honey Goat Cheese

salt and pepper to taste

1/4 cup walnuts, toasted and chopped

fresh parsley for garnish

Directions

Preheat oven to 375 degrees. Prick sweet potatoes with a fork and rub with olive oil and wrap individually in tin foil. Bake for 45-60 minutes. Start checking sweet potatoes at 45 minutes for doneness. Potatoes should be soft when squeezed. Let cool.

Scoop out sweet potato flesh into a mixing bowl. Add in heavy whipping cream and goat cheese. Using a stand mixer or a hand mixer with the whisk attachment, whisk until smooth or until desired consistency.

In a small skillet over medium low heat - toast the walnuts. This should take 1-2 minutes - so don’t walk away!

Dress sweet potatoes with toasted walnut and fresh parsley.
