Cookie Ingredients

½ cup butter, softened

2/3 cup sugar

1 egg

¾ cup buttermilk

1 teaspoon vanilla

2 cups ap flour

½ teaspoon baking soda

½ teaspoon salt

½ cup cocoa

1 cup Equal Exchange Dark Chocolate chips2 cups water

Cookie Directions

In a mixer, cream butter, and sugar until light and fluffy.  Add egg, buttermilk, and vanilla and mix well.

In a separate bowl whisk together flour, baking soda, salt, and cocoa.

Combine wet and dry ingredients and stir until well mixed.

Fold in chocolate chips.

Chill dough in the refrigerator for at least an hour.

Preheat oven to 400 degrees.

Remove dough from refrigerator.  Using a 1” cookie scoop or two spoons.  Portion into 1” drops on a cookie sheet.

Bake for 10 minutes.

Topping Ingredients

¼ cup butter

½ cup dark brown sugar

3 tablespoons heavy cream

1/8 teaspoon salt

1 ¼ cups powdered sugar

½ cup toasted and salted pecans

Topping Directions

Melt butter. Add brown sugar and 2 tablespoons heavy cream, stirring constantly with a whisk, until sugar is dissolved.  Add salt.  Allow to cook and bubble for about 2 minutes, stirring every 30 seconds.

Remove from heat and transfer into a bowl to cool.

Once cool. Beat in powdered sugar and remaining cream.  If you would like a thinner frosting, add more milk or cream. 

Frost cookies and top with salted pecans.
