Ginger Peach Chutney
Ingredients
¼ cup apple cider vinegar
¼ cup water
1 tablespoon dark brown sugar
Pinch of salt
1 small yellow onion, finely diced
1 clove garlic, minced
1/2-inch piece of ginger root, peeled and minced
2 large peaches, peeled and diced
Directions
In a small saucepan combine vinegar, water, brown sugar, and salt over medium-high heat. Bring to just a boil, stirring occasionally.
Add onion, garlic, and ginger. Bring back to just boiling, then simmer 10 minutes, stirring occasionally.
Add peaches. Bring back to a low boil, then reduce heat and simmer for 10 more minutes until the sauce thickens and some of the peaches break down (there should still be some chunks), stirring occasionally.
Remove from heat and cool before serving. Store in the refrigerator.
