Wild Rice “Stuffing” with Sweet Italian Sausage and Fennel

makes 6-8 servings

Ingredients

1 1/2 cups wild rice

4 cups vegetable (or chicken) broth

1 tbsp olive oil

3 celery stalks, diced

1/2 medium yellow onion, diced

2 fennel bulbs, diced into 1/4” pieces

2 garlic cloves, minced

salt and pepper to taste

parsley for garnish

Directions

In a large saucepan, combine vegetable broth and wild rice. Bring to a boil. Reduce heat to medium-low, cover, and simmer until rice is tender. Rice will take about 45- 50 minutes. Check and stir every 15 minutes.

Meanwhile, in a large skillet, cook the sausage. Remove from pan and set aside. Add 1 tbsp of olive oil to the skillet, and add celery, onion, and fennel. Cook on medium heat until onions are golden. Add in garlic and cook an additional minute.

Add rice to skillet and sauage to skillet. Stir until combined. Season to taste with salt and pepper. Garnish with fresh parsley.
